Instant Pot Beef Stew with Dumplings

This recipe is a new favorite. In the instant pot it takes a stew that needs to cook all day, into a 40 minute meal. And it makes enough to feed my family for 2 meals. Its a cheap and wholesome winter comfort food. I make it in my 8qt instant pot.


Ingredients

  • 2 pounds of cubed bite size pieces of beef or pork
  • 8 medium sized potatoes peeled and cubed
  • 6 medium sized carrots cut into bite sized chunks
  • 1 can diced tomatoes 
  • 1 medium onion diced
  • 2 cups frozen peas
  • 2 cups frozen corn
  • 2tsp garlic powder
  • 2tbsp onion powder
  • 1tsp celery salt
  • 2tbsp parsley flakes
  • 3 beef bullion cubes
  • 4 + 1 cups water
  • 1/2 cup cornstarch

Dumplings ingredients

  • 2 cups flour
  • 1/4 cup sugar
  • 4 tsp baking powder 
  • 1/2 cup melted butter
  • 1 cup water 

Directions

  1. In instant pot put meat, and cubed veggies.
  2. Add frozen veggies,  diced tomatoes, garlic powder, onion powder, parsley, and celery salt.
  3. Dissolve beef bullion cubes in 4 cups of boiling water
  4. Pour beef bullion into pot.
  5. Turn instant pot on the meat setting for 25 minutes.
  6. While stew is cooking, in a bowl stir 1 cup water and corn starch. place aside.
  7. In a seperate large bowl we will make dumpling mixture. Add dry ingredients to bowl and mix.
  8. Add melted butter.
  9. Slowly add water while mixing. Mixture should be sticky.
  10. When stew is done cooking let out steam and add cornstarch and water mixture and mix stew. 
  11. On top of the stew plop dumpling mixture with a tablespoon use all mixture in tables spoon size pieces.
  12. Turn instant pot back on the meat setting for 5 more minutes.
  13. Release steam and serve.

Instant Pot Easy BBQ Chicken

For Christmas I bought myself an Instant Pot. I have wanted one for awhile but the thought of spending that kind of money on myself hurts my head. Then magicly one came up for 50% off on Amazon. I took the plunge. I have been spending the past few weeks trying to perfect some recipies. My recipe for BBQ chicken cam out pretty darn tasty.
Ingredients

  • 1 cup ketchup
  • 1/3 cup soya sauce
  • 1/4 cup sugar
  • 1 tbsp of Club House Garlic Plus seasoning
  • 1/4 cup water
  • 4 frozen skinless boneless chicken breasts

Directions

  1. In a bowl mix together the ketchup, soya sauce, sugar and seasoning.
  2. In your instant pot place frozen chicken in.
  3. Cover chicken with home made BBQ sauce.
  4. Pour 1/4 cup water into bottom of pot.
  5. Put the cover on and cook in the Meat setting for 25 minutes.
  6. After cooked take chicken breasts out and shred with 2 forks.
  7. Put back into bbq sauce mixture.
  8. Serve.

Butterscotch Candy

Another Christmas treat. Just like Grandma made. Easy to make and always a hit with the kids.

Ingredients

  • 1/2 cup butter
  • 2 cups sugar
  • 1tsp pur vanilla extract
  • 1/4 cup water
  • 1/4 cup dark corn syrup
  • icing sugar to coat finished candy with

Directions

  1. Put sugar, water, corn syrup, vanilla and butter into a pot.
  2. Turn on medium heat and stir constantly until boiling.
  3. When it starts to boil, put in candy thermometer, and without stirring let candy heat up to 300°
  4. When liquid candy reaches 300° remove from heat and let stand for 1 minute.
  5. Pour candy onto a light icing sugar covered silicone baking sheet.
  6. Let sit for 2 minutes till it cools enough to cut into pieces with scissors. 
  7. Coat with icing sugar so pieces not stick to each other.

Barley Christmas Candy

We live on the East coast of Canada and barley candy at Christmas is a big deal. Reminds everyone of when they were kids. I had never heard of barley candy until I moved here, it basicly tastes like the red candy on a candy apple. In hard candy form.

Ingredients 

  • 1 Cup sugar
  • 1/4 cup dark corn syrup
  • 1/4 cup water
  • 1/4 tsp cream of tarter
  • food colouring *optional
  • icing sugar to coat after candy has been cut

Directions

  1. Pour sugar, water, and corn syrup into pot and turn on medium heat.
  2. Stir continually until it starts to boil.
  3. Put candy thermometer in t8he pot and leave to boil without mixing until liquid candy hits 300°
  4. Take off stove and let sit for 1 minute 
  5. Pour in a few drops of food colouring if colour is wanted.
  6. Add cream of tartar and mix
  7. Pour liquid candy on silicone baking sheet lightly dusted with icing sugar. You can use parchment paper if you don’t have a silicone baking sheet.
  8. Let cool for about 2 minutes.
  9. When it’s cool enough to handle but still warm you cut the candy up into bite sized pieces.
  10. Coat cut pieces in icing sugar. this prevents the candy from sticking to other pieces.

Chewy Pecan Cookies with Brown Sugar Icing

Here I am mid-December, a day till my youngest child’s birthday and a hand full of days until Christmas. Let the Christmas baking panic begin!! Today I made cookies that I got off the Redpath sugar webite. They are easy to make, and actually really good. 

Ingredients

  • 2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup dark brown sugar
  • 1/3 cup white sugar
  • 1 egg
  • 3/4 cup melted butter
  • 1 tsp vanilla
  • 1/2 cup chopped pecans

Icing and Topping Ingredients

  • 2 1/2 cups icing sugar
  • 1/3 cup melted butter
  • 1/4 cup milk
  • 1/3 cup packed brown sugar
  • 1/4 tsp sea salt
  • 1 tsp vanilla
  • 1/4 cup pecans

    Directions

    1. In a bowl combine flour, baking soda, baking powder and salt.
    2. In another bowl combine melted butter, sugar, brown sugar and vanilla.
    3. Slowly add dry ingredients to wet ingredients, mixing as you go.
    4. Add pecans to cookie mixture.
    5. Make balls of cookies about 1 inch in diameter and place on greased bakinging sheet.
    6. Bake at 350° for 8 minutes.
    7. In a mixer, mix together Icing ingredients. Butter, brown sugar, milk, vanilla.
    8. Slowly add icing sugar until combined.
    9. Ice cooled cookies with icing and garnish with pecan and a little bit of sea salt.

    Ugly Christmas Sweater Chocolate Sugar Cookies

    These cookies are the perfect party nibbler, for your ugly Christmas sweater party.  Tacky colours but tasty cookies make these perfect. 

    Ingredients

    • 3/4 cup softened unsalted butter
    • 2/3 cup cocoa powder
    • 1/2 tsp salt
    • 1 egg
    • 1/4 tsp baking powder
    • 1 tsp instant coffee
    • 1/2 cup white sugar
    • 1/4 cu brown sugar
    • 2 cups flour
    • 1 tsp pure vanilla extract

    Icing

    • 3 egg whites
    • 2 tsp lemon extract (I used cinnamon extract with great results)
    • 4 cups icing sugar
    • 1/2 tsp cream of tarter

    Directions

    1. Cream together butter, eggs, vanilla and sugar.
    2. In a seperate bowl mix together the remainder of dry ingredients.
    3. Slowly add dry ingredients to wet ingredients, until combined.
    4. On a floured flat area roll out dough.
    5. Use cookie cutters. I don’t have any so I used the rim of a glass to cut cookie shape.
    6. Bake at 350 for 8-10 minutes

    Icing

    1. Beat eggs with mixer on high until they are foamy.
    2. Add Lemon Extract and cream of tarter.
    3. Slowly add icing sugar until combined. 
    4. Seperate icing into as many colours as you choose to make.
    5. Put icing in piping bags.
    6. Pipe icing onto cooled cookies.

    *Useful tip* you can use a tooth pick to swirl designs or fill in missing spots of icing.

    Quick Mac n’ Cheese

    Quick Maccaronni and cheese – We all have days where we have so much going on that we barely have time to go pee. Today is one of those days. Trying to finish a GIANT art commission that is due soon, I have lost track of the day. So I have turned to an easy favorite.

    Yes folks that’s giant lobster in my itty bitty house….

    No he isn’t done…. ugh

    Anyways back to dinner….

    Ingredients

    • 1 large bag of pasta cooked as per directions on the bag
    • 1 can condensed milk
    • 1 can condensed mushroom soup
    • 6 cups grated old cheddar cheese
    • 1 tsp garlic powder 
    • 1 tbsp onion powder
    • 1/2 cup bread crumbs

      Directions

      1. Cook pasta as per directions on bag.
      2. In another pot put condensed milk, condensed mushroom soup, garlic powder and onion powder. 
      3. Turn on med heat.
      4. Add 4 cups grated cheese. Stir continually until melted.
      5. Add melted cheese mixture to cook drained pasta and mix.
      6. Pour into greased baking pan and sprinkle remaining cheese and bread crumbs on top.
      7. Cook at 350 until cheese on top is melted. About 20 minutes.
